Fisherman's Soup (Ukha) Recipe:

Ingredients:

  • 1 kg (2.2 lbs) fish (such as salmon, cod, or perch), cleaned and cut into chunks
  • 1 large onion, finely chopped
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 1 leek, sliced
  • 1 celery stalk, sliced
  • 1 bay leaf
  • 5-6 black peppercorns
  • Salt to taste
  • Fresh dill for garnish
  • Lemon wedges for serving

Instructions:

  1. In a large pot, combine the fish chunks, chopped onion, sliced carrots, diced potatoes, sliced leek, and sliced celery.

  2. Add enough water to cover the ingredients, and place the pot on the stove over medium heat.

  3. Add the bay leaf and black peppercorns to the pot. Bring the mixture to a simmer, then reduce the heat to low. Skim off any foam that rises to the surface.

  4. Simmer the soup for about 20-30 minutes, or until the vegetables are tender and the fish is cooked through.

  5. Season the soup with salt to taste. Be cautious with the salt, as fish can be naturally salty.

  6. Remove the bay leaf and discard it. Taste the soup and adjust the seasoning if needed.

  7. Ladle the hot soup into bowls, making sure each serving has a mix of fish and vegetables.

  8. Garnish the soup with freshly chopped dill.

  9. Serve the Ukha hot, accompanied by lemon wedges on the side. Squeeze lemon juice into the soup according to individual preference.
