Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups fish or seafood broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup dry white wine (optional)
  • 1 lb mixed seafood (shrimp, mussels, calamari, etc.)
  • 1/4 cup fresh basil, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, diced carrots, sliced celery, and minced garlic. Sauté until the vegetables are softened.

  2. Pour in the crushed tomatoes and fish or seafood broth. Stir well to combine.

  3. Add dried basil, dried oregano, dried thyme, salt, and pepper to the pot. If using, pour in the white wine. Stir again.

  4. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-30 minutes to allow the flavors to meld.

  5. Add the mixed seafood to the pot and cook until the seafood is cooked through. This will depend on the type of seafood you use, but it usually takes about 5-7 minutes.

  6. Taste the soup and adjust the seasoning if necessary.

  7. Serve the tomato seafood soup hot, garnished with chopped fresh basil. Provide lemon wedges for squeezing over the soup.
